PASTEURIZATION ICE-CREAM TURBINE    PCT/20-60AT

  • Air condenser.
  • Multifunctional pastoturbine for mixing, heating, pasteurizing, cooling and lashing all creams, sauces and mixes.
  • Adjustable times and temperatures. 
  • Intuitive and easy to use "Touch Screen" control panel (18 pre-installed cycles: 9 for ice cream, 7 for pastry, 2 for gastronomy) with the possibility of inserting new recipes.
  • Manual or fully automatic cycle.
  • Pasteurization and lashing are carried out in a single cylinder, avoiding any handling or transfer.
  • Vertical evaporator cylinders for a larger exchange surface.
  • Exclusive distribution device.
  • System self diagnosis.
  • Mix per cycle: 4/8 litres.

MAIN FUNCTIONS

  • Mix and Stir the ingredients: milk, cream, powdered milk, fruit, sugar, dextrose, eggs, emulsifiers, stabilizers, etc. required to prepare gelato, sorbetto and granita; and ingredients of different pastry and gastronomy products.
  • Heat and Sanitize: melt fats and chocolate and eliminate the most of pathogenic bacterial flora.
  • Mix and cook ingredients of possible pastry and gastronomical specialties.
  • Cool and complete the pasteurization process.
  • Freeze the mix while incorporating air into it.
  • The smooth mechanical and thermal treatment produces a fine and creamy ice cream or gelato.
  • Discharge the product ready to be served.
