HOW IT WORKS
- The unit operates on the principle of direct heat regeneration with optional humidification.
- It offers several operating modes with fixed temperature settings:
- Regeneration without humidification (R) – for dishes that do not require moisture.
- Regeneration with humidification (R+H) – for dishes sensitive to drying.
- Regeneration with automatic switch to holding mode (HOLD) – after heating, food is automatically held at 50 °C.
- Independent holding mode (HOLD) – long-term safe holding of food at serving temperature.
- Two regeneration temperatures are available: 120 °C or 160 °C, with automatic transition to holding at 50 °C.
HOW IT IS USED IN PRACTICE
- Loading – GN 1/1 containers with prepared food are inserted lengthwise into the chamber.
- Mode selection – the operator selects the type of regeneration (with or without humidification) and sets the time.
- Automatic regeneration – the unit ensures uniform heating.
- Temperature holding (HOLD) – after regeneration, food is automatically kept at a safe temperature.
- Serving – dishes are ready for immediate service without loss of quality.
