FAST BLAST FREEZER  GTP-3/1R

  • The unit is engineered for rapid chilling and shock freezing, effectively limiting bacterial growth while preserving the structure, flavour and nutritional values of food, fully supporting the principles of a modern cold chain.
  • Ideal for restaurants, hotels, catering operations, pastry shops, bakeries and professional kitchens requiring consistent product quality and maximum food safety.

  • Production per cycle:
  • 8 kg (+70 °C → +3 °C) – blast chilling.
  • 5 kg (+70 °C → −18 °C) – blast freezing.
  • Stainless steel tray runners for pans and GN containers, 70 mm spacing.

Control and operation

  • Control of chilling and freezing cycles with “Hard / Soft” function.
  • Settings by time or by core temperature using a core temperature probe (standard equipment).

principle of blast chilling and freezing

  • In food hygiene and safety, the fundamental principle of blast chilling and freezing is the rapid reduction of core temperature:
  • chilling from +70 °C to +3 °C within 90 minutes (UK standard), or from +65 °C to +10 °C within 110 minutes (NF standard),
  • freezing from +70 °C to −18 °C within 240 minutes (UK standard), or from +65 °C to −18 °C within 270 minutes (NF standard).
  • Diamond blast chillers and blast freezers are designed to reliably ensure this principle, contributing to maximum food safety, quality and shelf life.

Construction and technical features

  • Monoblock construction, inside and outside (including the rear panel) made of AISI 304 stainless steel.
  • Pressed inner base with drain for easy and thorough cleaning.
  • Rounded corners and edges for optimal hygiene.
  • Door with magnetic gasket and integrated flush handle; gasket replacement without tools.
  • Left-hand hinges with automatic closing and 90° hold-open position.
  • Door microswitch stopping the evaporator fan when the door is opened.
  • Ventilated evaporator, treated against salts and food acids, completely concealed.
  • Fan motor with IP45 protection rating.
  • 4 adjustable feet for stable positioning.
  • Manufactured in compliance with all applicable EU (CE) standards.

Refrigeration system

  • Ventilated condenser with front access for servicing.
