- In food hygiene and safety, the fundamental principle of blast chilling and freezing is the rapid reduction of core temperature:
- chilling from +70 °C to +3 °C within 90 minutes (UK standard), or from +65 °C to +10 °C within 110 minutes (NF standard),
- freezing from +70 °C to −18 °C within 240 minutes (UK standard), or from +65 °C to −18 °C within 270 minutes (NF standard).
