Teppanyaki – from Japanese griddle cooking to open kitchens
Teppanyaki is a method of preparing food on a large, smooth steel griddle plate. The name comes from the Japanese words “teppan”, meaning an iron plate, and “yaki”, referring to grilling or cooking. The modern form of Teppanyaki developed in Japan during the 20th century and gradually became popular outside Asia.
A characteristic feature is the preparation of ingredients directly on a large heated surface. Meat, fish, seafood, vegetables, tofu, rice or noodles can be prepared on different sections of the plate, allowing the individual stages of cooking to take place directly in front of the chef.
Teppanyaki also became associated with the concept of open-kitchen dining, where guests can watch their food being prepared. The chef’s work with ingredients and spatulas can therefore become part of the presentation and the overall dining experience.
Teppanyaki grills on stand for show cooking
Models on stand create a complete Teppanyaki workstation and can also be incorporated into open kitchens and areas designed for show cooking. The chef can work directly behind the grill and prepare different ingredients on a continuous cooking surface in front of guests.
The integrated base distinguishes these appliances from countertop Teppanyaki grills, which require a suitable work stand or supporting surface. The standalone design also makes it possible to create a dedicated Teppanyaki section within a professional kitchen or dining area.
