Processing meat and other foods
A horizontal cutter processes ingredients using a three-blade cutting system mounted on a horizontal shaft. The rapid movement of the blades allows meat, fish, vegetables and other ingredients to be chopped, cut and mixed to the required consistency. The machine is also suitable for preparing pâtés, spreads, fillings, sauces and fine meat mixtures.
Bowl capacity and batch size
When selecting a horizontal cutter, it is important to distinguish between bowl capacity and the maximum weight of a single batch. The 6 L model can process batches of up to 4 kg, while the 12 L models can process up to 7 kg. The appropriate machine size should therefore be selected primarily according to the quantity of ingredients normally processed in one cycle.
Blade speed and final consistency
Blade speed and processing time influence the final texture of the mixture. Fixed-speed models are suitable for regularly processing similar ingredients, while variable speed control allows the processing intensity to be adjusted more precisely to the recipe and the required consistency.
Preparation of meat mixtures
Horizontal cutters can be used for processing meat and preparing fine meat mixtures, pâtés and fillings. During fine processing, both processing time and product temperature should be monitored, as the rapid movement of the blades gradually increases the temperature of the mixture. Recipes that require a low processing temperature therefore use well-chilled ingredients and, depending on the production method, ice or cold water.
Cleaning the bowl and blades
The removable stainless steel bowl and removable blade system facilitate thorough cleaning of food-contact components. Regular cleaning and sanitation are particularly important when processing meat and other hygiene-sensitive ingredients. Safety devices also prevent operation when the protective cover is not correctly secured.
