Food processing in a vertical cutter

A vertical cutter processes ingredients using a blade positioned near the bottom of the bowl. High blade speeds allow ingredients to be chopped, cut and mixed to the required consistency depending on processing time. These machines can process meat, fish, vegetables, fruit, herbs, nuts, cheese and other ingredients, as well as prepare pesto, sauces, purées, pâtés, spreads and various fillings.

Bowl volume and usable capacity

When selecting a vertical cutter, it is important to distinguish between the total bowl volume and its usable capacity. The bowl should not be filled to its maximum volume, as ingredients require sufficient space to move and process evenly. The appropriate machine size should therefore be selected according to the quantity of ingredients normally prepared in a single batch.

Speed and final consistency

Blade speed and processing time influence the final texture of the food. Lower speeds are suitable for coarser processing and gradual combining of ingredients, while higher speeds allow finer chopping and the preparation of purées, spreads, sauces or more homogeneous mixtures. On selected models, variable speed control allows operation to be adapted more precisely to the ingredient and the required result.

Blades for different applications

The type of blade also influences the processing result. A smooth blade is suitable for general chopping and processing of common ingredients, while serrated blades are suitable for firmer or fibrous foods. Special blades allow the cutter to be adapted to specific preparations, with pesto blades also available for selected models.

Cleaning the bowl and working components

The removable stainless steel bowl facilitates emptying and thorough cleaning after food preparation. The transparent lid provides a clear view of the processing cycle, while an opening in the lid allows ingredients to be added during operation on selected models. Safety microswitches prevent the machine from operating when the lid or control lever is not correctly secured.
