Gas combi ovens with steam boiler use gas heating and a separate steam generator for precise steam production inside the cooking chamber. Lambda sensor continuously monitors actual humidity and automatically adapts the cooking process to the quantity and type of food loaded. Touchscreen control panel provides automatic modes, recipe storage, and management of multi-stage programs. Product range includes models with capacities of 6x GN 1/1, 10x GN 1/1, 10x GN 2/1, 20x GN 1/1, and 20x GN 2/1.
Gas combi ovens with steam boiler combine powerful gas heating with a separate steam generator. Stable steam production and precise humidity control are particularly important for steaming, gentle preparation of delicate ingredients, and processing larger batches. Units provide automatic modes, programmable cooking processes, and functions for monitoring food quality and safety.
Integrated steam boiler provides a stable steam supply at both low and high temperatures. Lambda sensor measures actual humidity inside the cooking chamber and automatically responds to the quantity, size, and type of food loaded. This system helps reduce weight loss, retain moisture, and provide more precise control over the cooking process.
Boiler is made of AISI 316L stainless steel for increased resistance to corrosion. Automatic descaling is integrated into the cleaning system.
Color touchscreen allows operation in automatic, program, or manual mode. Memory can store up to 1,000 recipes, organize them into 16 categories, and create programs with up to 16 cooking stages. Automatic mode includes preset programs for different food groups and adjusts selected cooking parameters according to the loaded batch.
Multipoint core temperature probe measures temperature at 6 points inside the food. EcoDelta, MultiTimer, and low-temperature cooking functions provide additional control, including when several dishes are prepared simultaneously.
Steam mode can operate at temperatures ranging from 25 to 130°C. Low-temperature steam from 25 to 99°C is suitable for gentle cooking, regenerating, and sous-vide preparation. Steam at 100°C can be used for vegetables, fish, and seafood, while high-temperature steam from 101 to 130°C enables faster processing of selected foods.
In addition to steaming, units support baking, roasting, browning, braising, regenerating, dehydrating, proofing, pasteurizing, and combination cooking processes.
Air distribution system works with a fan offering 7 speeds from 300 to 1,500 rpm and automatic reverse rotation. Airflow can be adapted to delicate dishes, baking, and a fully loaded cooking chamber. Automatic preheating and rapid chamber cooling make it easier to switch between different temperature modes.
Steam-boiler models are suitable for restaurants, hotels, catering companies, central kitchens, hospitals, schools, assisted-living facilities, and other operations preparing a high number of portions. They are especially useful where precise steam control, extensive programming, and preparation of different dishes throughout the working day are required.
Models with capacities of 6x GN 1/1 and 10x GN 1/1 are suitable for small and medium-sized kitchens. Versions with capacities of 10x GN 2/1, 20x GN 1/1, and 20x GN 2/1 are designed for larger quantities of food and a high number of served portions. Selection should take into account required capacity, GN container format, unit dimensions, and availability of gas, electricity, treated water, and drainage.
Integrated system provides 4 automatic cleaning cycles, including descaling of the steam boiler. Short program takes approximately 33 minutes. Optimized cleaning reduces water consumption by approximately 33% and detergent consumption by approximately 22% compared with the previous generation.
Cooking chamber is made of AISI 304 stainless steel and features rounded internal corners for easier cleaning. Triple-glazed door reduces heat loss and can lower idle energy consumption during convection operation by approximately 10%.
Gas combi ovens with steam boiler are designed for kitchens requiring powerful gas heating, a stable steam supply, and extensive automation. When selecting a model, capacity as well as water quality, ventilation, and installation requirements must be considered.
